Hubby ate 939103.2 pounds of steak, bacon, and shrimp (followed by a nap). Ezra just ran by in his underwear and said he was going to make something with cement (I feel like I should follow-up here, but... meh 🤷🏻‍♀️). Camden is building a wooden calendar.  And I’m making ornaments for no apparent reason other than cute. 🎨

Pumpkin Oatmeal with Candied Pecans

21 Day Fix: Pumpkin Oatmeal with Candied Pecans is perfect for a cool fall morning. Pair it with your favorite cup o' joe and enjoy.

For Candied Topping
  1. 1/2 blue container of chopped pecans
  2. 1 teaspoon coconut oil (pure & unrefined)
  3. 1 teaspoon maple syrup
For Oatmeal
  1. 1 yellow container of cooked rolled oats
  2. 1/2 green container of pure pumpkin
  3. 1/2 teaspoon cinnamon
  4. 1/4 teaspoon pumpkin spice
  5. 1 dropper Vanilla Creme Stevia or sweetener of choice
  6. 1 teaspoon maple syrup
For Candied Topping
  1. In small non-stick pan, combine coconut oil and maple syrup.
  2. Add pecans.
  3. Heat over medium high heat, stirring constantly.
  4. Keep stirring until syrup reduces and all of the pecans are covered, approximately five minutes.
  5. Pour onto parchment paper and let cool completely. The candy coating will set as it cools.
For Oatmeal
  1. In microwave-safe bowl, combine all oatmeal ingredients thoroughly.
  2. Microwave for 40 seconds to marry the flavors.
Serve
  1. Top oatmeal with candied pecans.
  2. Put in your belly.
Great tip
  1. Try other candied nuts such as walnuts!
21 Day Fix
  1. 1 yellow
  2. 1/2 green
  3. 1/2 blue
  4. 1 oil teaspoon
  5. Sweetener teaspoons of choice (page 15)

    I cannot get enough of this! Most of the time I skip the candied topping but I don’t even miss it! So yummy 🙂
