For Candied Topping
- 1/2 blue container of chopped pecans
- 1 teaspoon coconut oil (pure & unrefined)
- 1 teaspoon maple syrup
For Oatmeal
- 1 yellow container of cooked rolled oats
- 1/2 green container of pure pumpkin
- 1/2 teaspoon cinnamon
- 1/4 teaspoon pumpkin spice
- 1 dropper Vanilla Creme Stevia or sweetener of choice
- 1 teaspoon maple syrup
For Candied Topping
- In small non-stick pan, combine coconut oil and maple syrup.
- Add pecans.
- Heat over medium high heat, stirring constantly.
- Keep stirring until syrup reduces and all of the pecans are covered, approximately five minutes.
- Pour onto parchment paper and let cool completely. The candy coating will set as it cools.
For Oatmeal
- In microwave-safe bowl, combine all oatmeal ingredients thoroughly.
- Microwave for 40 seconds to marry the flavors.
Serve
- Top oatmeal with candied pecans.
- Put in your belly.
Great tip
- Try other candied nuts such as walnuts!
