Protein {Mock} Tortilla

These protein tortillas are a great alternative to traditional wheat wraps! They store perfectly in the fridge.

  • 1 egg
  • Salt & pepper to taste
  • Spray cooking oil coconut oil or extra virgin olive oil


  1. Spray small nonstick pan with cooking oil and preheat over medium high heat.
  2. Whisk egg and season with salt and pepper.
  3. Pour egg into pan and swirl to cover entire surface. Hint: Use the back of a ladle to spread the egg, if necessary.
  4. Once egg is set, gently flip with a spatula.
  5. Continue cooking until other side is set (less than one minute! do not walk away from your pan).
  6. Fill with yummies and enjoy immediately, or chill and store for later.
