Zucchini Noodles (Zoodles)

A delicious and quick "zoodle" concoction to use as an entree or side dish.

Ingredients
- 1/2 zucchini
- 1 Roma tomato
- garlic powder
- salt
- Italian seasoning
- extra virgin olive oil
Instructions
- Drizzle EVOO in medium-high heat pan. Add sliced Roma tomato and sprinkle with garlic powder, salt and Italian seasoning.
- While tomato is cooking, spiral the unpeeled zucchini.
- Saute tomato until it begins to soften and skin wrinkles.
- Add zucchini spirals to pan and cook for four minutes, stirring twice.

- 1 teaspoon oil
Great tip
- Top with Parmesan (21 Day Fix blue) or grilled chicken (21 Day Fix red) 🙂

I made this tonight! Very tasty! But my “zoodles” were crunchy!!! What did I do wrong?

Crunchy = cook longer
Mushy = cooked too long

I made this tonight and added kalamata olives and chicken linguica sausage. It was so delicious. I used a whole zucchini and two romas so I can have it for lunch tomorrow, too!
