Ingredients
- 1/2 c whole grain penne, cooked and cooled
- 3/4 c divided into equal parts shredded & cooled chicken and plain Greek yogurt
- 1/8 c cheddar cheese, shredded
- 1/4 c celery, thinly sliced
- 1/4 c carrots, shredded
- Tobasco or Cholula to taste
- Pink Himalayan salt & pepper to taste
Instructions
- Add all ingredients to a medium mixing bowl.
- Fold gently until fully incorporated.
- Put in your belly.

How do keep your greek yogurt from curdling? It seems every time I cook with it, it doesn’t come out smooth like yours? Any advice?

This one is a cold salad, so no curdling here. With the mac & cheese recipe, though, the splash of cooking water and melting the cheese FIRST (before adding the yogurt) is the trick. It brings the overall dish temperature down and the yogurt isn’t directly hitting the hot pan. It’s getting mixed into the already smooth cheese and pasta.

add a splash of milk. and i use chaboni plain greek yogurt when I cook my sauce down. Splash of milk and leave on a medium low heat

Maybe stupid question but when it says equal part chicken and yogurt does that mean 3/4 cups of each or half a 3/4 of the chicken and the rest yogurt?

I’m sorry, not sure what happened, but my comment was longer. The chicken and yogurt part. Would be simply using a 3/4cup measuring cup and filling it up half way with chicken then the rest with the yogurt?

for the penne. is it a ½ cup of dried pasta before cooked or after cooked? I did before and it seemed right. Yummy recipe by the way!
