I LOVE to hoard my carbs for dishes like… pasta. 🙂 I do. I love pasta. So for 21 Day Fix menu options, I’ve been turning more and more toward these protein tortillas instead of traditional wheat and whole grain wraps. Lettuce wraps are always a great option, too, but sometimes you just want something with a little more substance to it. With these protein tortillas, you can whip up a LOT of them very quickly, use them immediately, or fridge them for later. If you are using freezer-friendly filling ingredients like cooked sausage, chicken or turkey, you can even wrap them up and toss them in the freezer for grab and go meals later.
Protein {Mock} Tortilla
Ingredients
- 1 egg
- Salt & pepper to taste
- Spray cooking oil coconut oil or extra virgin olive oil
Instructions

Spray small nonstick pan with cooking oil and preheat over medium high heat.

Whisk egg and season with salt and pepper.

Pour egg into pan and swirl to cover entire surface. Hint: Use the back of a ladle to spread the egg, if necessary.

Once egg is set, gently flip with a spatula.

Continue cooking until other side is set (less than one minute! do not walk away from your pan).

Fill with yummies and enjoy immediately, or chill and store for later.

Great Tip:
These store beautifully! Make a huge batch and store in an airtight container in the fridge for up to 3 days.
