Instagram post 2207017566874845787_1334991160 For the first time, in long time, we have no holiday plans. No schedule to keep. No parties to attend. No adulting to do. No peopling. Just us. 🥰

And we are taking full advantage of it. 😆
Hubby ate 939103.2 pounds of steak, bacon, and shrimp (followed by a nap). Ezra just ran by in his underwear and said he was going to make something with cement (I feel like I should follow-up here, but... meh 🤷🏻‍♀️). Camden is building a wooden calendar. And I’m making ornaments for no apparent reason other than cute. 🎨
Merry Christmas. 💕

21 Day Fix: Double Chocolate Peanut Butter Lava Cake

Disclosure: This post may contain affiliate links from which I will earn a commission.

Double Chocolate Peanut Butter Lava Cake.  Does it get any better than the title of this recipe?  I think not.  Just finished my workout and needed some protein for recovery, so whipped up this bad boy.  Mix and match fruits and nut butters.  Use whatever suits your fancy.  Bananas and almond butter would be amazing.  Oh!  Throw some chopped peanuts on top, too.  Oh, yes, please.

Total Time

Total Time
5 min
Ingredients
  1. 1 scoop Vegan Chocolate Shakeology®*
  2. 1/4 t baking powder
  3. pinch of sea salt
  4. 1 T unsweetened cocoa powder
  5. 1 egg white
  6. 2 t honey
  7. 5 T unsweetened vanilla almond milk
  8. 2 t peanut butter
Instructions
  1. Spray mug with coconut oil.
  2. In a small bowl, combine Shakeology, baking powder, sea salt and cocoa powder.
  3. Add egg white, honey and almond milk. Stir until fully combined.
  4. Add half of the batter to the bottom of the prepared mug.
  5. Drop 1 teaspoon of peanut butter in center of batter. Add remaining batter to the mug.
  6. Microwave times will vary. Start with 1 minute, 30 seconds and add 10-second intervals until desired cake consistence is achieved. My microwave's sweet spot was 1 minute and 50 seconds.
  7. Remove from microwave and allow to cool in mug for 1 - 2 minutes.
  8. Remove from mug (or eat directly from it!) and drizzle with 1 teaspoon peanut butter.
  9. Put in your belly.
21 Day Fix
  1. 1 red
  2. 2 teaspoons
Great tip
  1. Top with sifted Vanilla Shakeology, fresh berries or toasted coconut. Serve with homemade frozen yogurt or banana ice cream.
  2. *Baking Shakeology can denature some of the nutritional properties. I personally believe a less-nutritional superfood cake is still a better option than a traditional molten lava cake averaging over 400 calories and 30 grams of sugar.

Made this tonight- not that moist but very good and filling! I had to keep telling my 3 year old that it was my dessert, not hers! Haha. Did you come up with this recipe or find it elsewhere? I’m asking because I’d like to put it on my blog in the future.

Thanks, Kristen! I came up with it through about half a dozen not-so-yummy trial and errors, haha.

Could 1 whole egg be used? I hate using just the whites because I don’t know what to do with the yolks :-/.

I haven’t tried it with one whole egg, but give it a shot, Kim! I usually scramble and cook the yolk for one of the kids… or my dog, haha!

    This was DELICIOUS!
By FAR the best 21 DF dessert recipe I have tried!
    I modified a bit:
    -used whole egg
-added 1/2 ripe mashed banana for additional moisture and sweetness.

I heard they send you meal replacements after you order the kit. I don’t use meal replacements. Is this mandatory?

If the meal replacements are not something that is sent after you buy the kit, that’s fine. Let me know how the meal replacements work. I don’t wish to buy anything but the advertised kit.. Anything sent to me later I don’t want if I have to continiue to pay for meal replacements later.

    Thanks,

Hey, Moni! If your purchase the 21 Day Fix challenge pack, it comes with a 30-day supply of Shakeology (or 24 days, if you choose the box with individual packets rather than the bag). If you do not cancel it, yes, it will auto-ship again the next month. There is no obligation, though, so you can totally cancel it as soon as you want. You can even place the order and hop on the chat immediately after to cancel the auto-ship option. Just let them know you want the initial challenge pack, but you want to cancel the HD (home direct) option moving forward. They have an online chat and they don’t pressure or hassle at all. I always encourage the challenge pack because it’s the best value option. It also has reduced shipping that way. It’s just $2 shipping.

      Does that make sense?

Don’t you have to count the egg white and almond milk as containers? I know they aren’t full ones but it seems like they should be counted somehow. And 2 tsp honey plus cocoa.. Where does that fall in?

I’m excited to try it! Just want to get my containers right!

Hmm, I’m not sure about vanilla. I could try for you tomorrow, though! Maybe I’ll add a couple tablespoons of unsweetened cocoa powder.

I plan on doing this once I have my baby in a few weeks. I will be breastfeeding. How is the program be altered for breastfeeding moms?

Hey, Jan! Aww, congrats! I’ve been breastfeeding the entire time on the program, too. It’s been so great for not only me, but stellar milk production for him, too. You’ll want to move up one entire bracket AND make sure you are drinking even more water than the program suggests. For most mommas, I recommend around 1 gallon of water per day. Hydration is so important for us and our supply as well.

Hmm, I’m not sure, Meg. Microwave times can vary, so maybe yours needs a little longer? Mine puffs up SUPER tall, then falls. I make sure the top is no longer moist in the middle and it’s good to go.
