This creamy, cheesy macaroni will please even the pickiest of eaters. Get creative and add crumbled turkey bacon, wilted spinach, mushrooms and more. Mix and match cheeses to your palate. Goat cheese has a beautiful, robust flavor.
Macaroni and Cheese

This creamy, cheesy macaroni will please even the pickiest of eaters. Get creative and add crumbled turkey bacon, wilted spinach, mushrooms and more. Mix and match cheeses to your palate. Goat cheese has a beautiful, robust flavor.

Ingredients
- 3/4 c cheddar cheese, shredded (or any cheese of your liking)
- 1 1/2 c whole grain penne, cooked (before draining, reserve a mug of the cooking water)
- 3/4 c plain Greek yogurt (I highly recommend Fage brand -- tried and true!)
- 1/4 t onion powder
- 1/8 t garlic powder (I bump it up to 1/4 t because I LOVE garlic!)
- 1/4 t pink Himalayan salt
- black pepper to taste
Instructions
- Return cooked pasta to pot on stove. Add a splash of the reserved cooking water.
- Add cheese and stir until fully melted.
- Add Greek yogurt and all spices.
- Stir until fully incorporated, adding cooking water to thin as necessary. Cheddar is naturally stringy when melting, so just add a splash of the water and it will turn into creamy goodness.
- Taste! Add additional salt and pepper, if desired.
- Serve and put in your belly.

Great Tip
- Need more protein? Top with grilled chicken, crumbled bacon or ground beef.

How many servings is this? What to measure in to get the serving size?

Hey, Stacy! The serving # are at the top of the recipes. This one serves three, so just portion it out into three equal servings and you’re good to go.

Hello, how do you keep your Greek yogurt from curdling? I just made this and my Greek yogurt curdled and its a lumpy watery mess. What am I doing wrong? =(

Put the yogurt in last after everything is starting to cool down.

Another delicious recipe!! Question: is the 1 1/2 cups of pasta measured before or after it’s cooked? (So is it 1 1/2 cups of pasta before cooked, or do you measure out the 1 1/2 cups after it’s cooked).
I made it for lunch this afternoon and measured out 1 1/2 cups uncooked, then followed the recipe and split it into 3 services and my serving seems pretty big. Now I’m afraid I may have had more than the 1 serving…oops.

It would be cooked. Each serving for a yellow is half cup cooked.

Correction to my comment above: I ate 1 yellow π But I got a lot more than 3 servings. That’s why I am slightly confused!

Not sure what went wrong but once I added the Greek Yogurt it all went downhill. Seems like everything separated and just turned to a runny mess π

Hmm, I’m not sure. π It’s always smooth and creamy for me. Perhaps the fat content in your yogurt is different or a variance in temperature (too hot). I usually use Fage or Aldi brand yogurt.

i was wondering two things:
1. Is pasta measured before or after cooking?
2. If mine came out grainy, what can I do to make it creamy? I did used packaged shredded cheese which I’m guessing has some anti-caking powder in it that caused it to be grainy, or maybe not. Thoughts?

Can you use regular yogurt instead of Greek?

You can try, but I don’t think it will have the same flavor, Jennifer. Greek is more tangy like sour cream and thicker, too.

Just made this. I wasn’t a fan. And that’s my own doing because I hate plain greek yogurt so I guess I was asking for it. Next time I might try ricotta cheese.

No, I don’t usually fuss over that. I mostly live 21 Day Fix (macros) as a lifestyle, so the rest is just gravy! There are free calculators for that online, though.

This was truly amazing! Mac and cheese is my weakness and I loved this waay more than the boxed stuff. Mine was a little watery so I made a little bit of a slurry with corn starch and water to thicken. This will be my go to on and off the fix. π

I have made this about 4 times now, and my whole family loves it and refer to it as “yogurt mac and cheese”. Delicious, healthy mac and cheese, and love that it is fix approved!
