Pumpkin French Toast Bake

This recipe is like bread pudding, French toast, cake and monkey bread all came together in one blissful, amazing dish. Top with maple syrup and enjoy!

Ingredients
- 8 slices bread cut into 1-inch cubes
- 8 eggs
- 1 cup unsweetened vanilla almond milk
- 1 green container of pure pumpkin
- 1 Tablespoon pumpkin spice
- 1 Tablespoon cinnamon
- 1 Tablespoon vanilla extract
- 2 Tablespoons maple syrup
- 2 droppers Vanilla Creme Stevia or optional sweetener
- Optional nutmeg and powdered stevia for garnish
Instructions
- Spray or rub 8x8 glass baking dish with coconut oil and add all bread cubes in an even layer.
- In a large bowl or stand mixer, whisk eggs, milk, pure pumpkin and all spices until full incorporated.
- Pour egg mixture over bread cubes.
- Get your hands in there and mush it all around until all of the bread is covered with the mixture.
- Cover dish with plastic wrap and refrigerate 4 hours to overnight.
4 or more hours later
- Preheat oven to 350.
- Uncover and sprinkle with stevia or nutmeg for extra flavor and garnish.
- Bake for approximately 40 minutes or until fully golden and knife comes out clean.
- Serve with maple syrup, honey or molasses (page 15).
Great Tip

If I don’t have a dropper, about how many teaspoons would that be??

I’m not entirely sure. I use liquid stevia, which comes with a dropper. Remember, you’ll probably be topping it with maple syrup, so it doesn’t need to be too sweet (in my opinion).

I use whole grain or whole what, but others have used Ezekiel and love it with that as well, Alisha.

Hi Jean-I made this french toast bake last night, and while it’s delicious, it’s a bit mushy/soggy. The knife and toothpicks are coming out clean though, and baking it a little extra didn’t do much. Is this the consistency it should have?

Hmm, mine is pretty solid like French toast. Bake a bit longer perhaps? Oven temps can vary.

I just suck up two random amounts, haha! You can use whatever sweetener you love, to taste.

Hi hi! I get it on Amazon. It’s at Giant Eagle (grocery store chain here) or at health food stores, too, but it’s a bit pricier there. It’s just near the other stevias — not chilled.

Just wandering if you have tried this with Applesauce instead of pumpkin? I am making the pumpkin now, but have some homemade applesauce that I need to use soon as well.

Question – is canned pumpking puree a green or purple? I read somewhere Autumn said it’s a purple?

Yeah, she said it’s purple now. 🙁 Fresh pumpkin (diced) is green and puree is purple because you can fit more in the container. So I’m still counting it as a green unless I’m usually a lot of it. In that case, I just use a little less!
