Nothing quite celebrates the upcoming fall season like pumpkin spice pancakes. Yum!

Pumpkin Spice Pancakes

A tasty stack of grain-free pumpkin pancakes for your belly.
Prep Time
5 min
For Pancakes
- 2 eggs
- 1/2 c pure pumpkin (not pumpkin pie filling)
- 1/4 teaspoon cinnamon
- 1/8 teaspoon pumpkin spice
- Optional sweetener from page 15 such as honey, maple syrup or stevia (I use a dropper of Vanilla Creme Liquid Stevia)
For Topping
- 1 teaspoon almond butter
- 1 teaspoon raw honey
For Pancakes
- Whisk all pumpkin ingredients together in a bowl.
- Spray nonstick pan with coconut oil.
- Heat pan over medium heat.
- Pour batter to form even pancakes. A ladle, ice cream scoop or measuring cup is helpful for this step.
- Cook until pancakes begin to bubble and are golden on bottom. Give the pan a little shake. If the pancakes slide a bit, they're ready to flip. If they stick, be patient and cook for a little longer.
- Flip and cook until golden.
For Topping
- Mix almond butter and honey in small dish.
- Microwave 10 seconds.
- Mix thoroughly until it creates a delicious almond syrup.
- Stack pancakes and top with almond syrup.
- Put in your belly.

Can you buy the sweet drops in a grocery store?
Yes, I’ve seen them at Giant Eagle and some local health food stores as well, Meghan.
When you say dropper…do you mean A drop or the entire dropper full? 🙂
I usually just pull up a random dropper full. It’s less than a teaspoon, I bet. That bottle lasts FOREVER!

This may be a dumb question but do you re – spray between pancakes to keep them from sticking? I’ve always wondered if it’s ok to spray a hot pan, it sometimes seems to burn immediately depending on the type of oil and how hot the pan is. TIA

What container is pumpkin?
Winter squash is green in the Eating Plan, but on a recent Facebook status, Autumn said pumpkin puree is purple. It’s still green in my book, ha!
When pureed, it is purple! Whole chunks is green. There is more in the puree, so that increases the sugar amount, like a purple!
Yes, that is correct, Maggie. I wrote this recipe long before Autumn made a Facebook post about it. In the Eating Plan, it says winter squash = green, so that’s what I used back then.
If you want it to be green, just measure whole chunks in the green and then puree them yourself. No biggie! 🙂
Made these this morning! I had to adjust the heat a bit and I didn’t get a great shape be first couple pancakes but this made 4 delicious and easy pancakes that made me feel like I was having a full on treat meal rather than a meal that goes right along with my 21 Day Fix meal plan! THANK YOU!!

hello 🙂 since this is just pumpkin what is the center of the pancake like? I made some from a different recipe and I didn’t like how mushy the inside of it was.
