5-Minute Pumpkin Pie

A delicious blend of warm pumpkin and spice make this dish a wonderful way to eat one of your 21 Day Fix GREEN containers!

Ingredients
- 1 green container pure (canned) pumpkin
- 1 egg, beaten
- 1 t pumpkin pie spice
- 1 pinch sea salt
- Optional sweetener from page 15 such as agave, stevia, honey, pure maple syrup or raw sugar. I use one random dropper amount of Vanilla Creme Liquid Stevia
Instructions
- Mix all ingredients in bowl.
- Spray 16 oz ramekin with coconut oil.
- Pour mixture into ramekin.
- Microwave for 5 minutes or until top of "pie" is no longer wet.
- Serve with optional toppings such as five pecan halves (1/2 blue), honey, maple syrup or frothed vanilla almond milk.
- Put in your belly.

Sounds really good! Fyi…Autumn just put out that pumpkin puree is a purple container, rather than green. π

I saw that! I’m still waiting for further clarification since pumpkin is a winter squash. Strange!

I agree that pumpkin is a green. It even has a lower glycemic index than other winter squashes.

I think it’s a purple like how tomato sauce/salsa is considered a purple… but plain tomatoes are a green. Kinda the same concept…

Pumpkin is listed as green for 21 Day Fix, though (listed as winter squash). Autumn later mentioned in a video that she’d like us to use canned pumpkin puree as purple because you can fit more in the container when it’s in puree form. If you freshly dice a pumpkin, it’s still green.

Hi hi! Thank you for your kind words! Well, this is kind of funny, but actually just froth the top of my son’s cup of almond milk and swipe a few spoons of it, haha! I don’t want to dirty extra dishes. π I use a milk frother I got at Bed, Beth & Beyond (with a coupon!). There are lots on Amazon, too. You just pour your milk of choice in a glass and put the frother in it and “pull” the milk upward to add air to it. It’s basically a teeny tiny hand blender/whisk.

Hey where are you guys finding your updates to the fix (purple rather than green e.g.)… If I did not read that here I’d never have know that. I use a LOT of pumpkin, and I have been counting that wrong I see now!

Did you ever get clarification about which container it falls under?

Diced pumpkin = green and pureed pumpkin = purple. She said puree is purple because you can fit more of it in the container when it’s in a pureed form. So if you want to count this as green, I’d just eat a little less. π

So, if I were to make this in a regular oven rather than a microwave, what temp/time would you recommend? I know this will sound odd, but we don’t have a microwave at home. (Not enough counter space.)
