Mozzarella Boats

It's a boat. It's cheese. It's a huge serving of vegetables! What could possibly go wrong here? ๐

Ingredients
- Spaghetti squash, cut in half and seeded
- Tomato sauce (my favorite 21 Day Fix brand is Muir Glen)
- Mozzarella
- EVOO (extra virgin olive oil)
- Garlic powder
- Sea salt and pepper to taste
- Fresh basil
Instructions
- Preheat oven to 375 and line baking sheet with parchment paper.
- Drizzle inside of spaghetti squash halves with EVOO, sea salt and pepper.
- Place halves cut side down on baking sheet and roast for 45 minutes.
- Remove from oven and run fork through inside of squash to create the spaghetti-like strands.
- Empty both sides into a bowl.
- Mix with desired amount of tomato sauce, garlic powder, sea salt and pepper.
- Return to squash skins.
- Top with additional tomato sauce and mozzarella, if desired.
- Bake for 15 minutes or until cheese is bubbly. Broil on high for 1 additional minute, if you want golden cheese. ๐
- Garnish with fresh basil and enjoy.

Cheesy half
- 3 green
- 1 teaspoon
- 1 purple
- 2 blue
Dairy-free half
- 3 green
- 1 teaspoon
- 1/2 purple

Aw, thanks, T!! I just got mine at Giant Eagle, a grocery store chain here. Where are you? It’s a winter squash, so they are more readily available in the fall for most areas.

I notice mid recipe you add spaghetti sauce and towards the end you add tomato sauce. Did you mean tomato sauce or is there a recipe for the spaghetti sauce? There isn’t spaghetti sauce listed in the ingredients. TIA!:)

I’m new to this 21 day fix. You say this serves 6, so I’m guessing you cut each halves into thirds and the 1/3 would be your serving tonwgich equals the above 21 day cup servings? This looks amazing BTW!

In the “pre” section it says “serves 6”. So what do you eat to count it as the 3 green and so on? Do you eat both halves? Just want to make sure I count my portions correctly. Looking forward to make these for lunch next week ๐

Hi Jean, I plan on trying this recipe this weekend and was wondering about the servings. It says this is 6 servings but I am not sure if that means 1/3 of 1 of the halves is a serving or not?

Ashlie, it really depends on the size of your squash. Spaghetti squash = green container, so how many green containers you can fill from one side depends on your squash. This one filled 3 greens per half of the squash.
